Many people are giving up meat and becoming vegetarians for different reasons. Former president of the United States, Bill Clinton became vegan, coming from a total American Southern food lover, in order to restore his health. There are several medical studies linking vegetarian diets to lower incidences of certain types of cancers, heart disease, Type II diabetes and other chronic diseases. Many news headlines say vegetarians live longer than meat eaters.
However, not all vegetarians are healthy even though you may have a healthy image towards them. Because they eat nothing but carb and dairy. Their typical meal would consist of: a bowl of cold cereal and milk or sugar loaded muffin and/or other pastry with a large cup of sugary and milky coffee for breakfast, a fake turkey sandwich, a bowl of soup and bread, or two slices of pizza for lunch, tomato or cream sauce pasta, macaroni and cheese for dinner. So, you may know someone who falls into this “unhealthy vegetarian” category (or you may be the one). Watch how they eat and give them some healthy advice to eat more vegetables. A meal should consist of 50% vegetables and other half can be divided between carb and protein. You can eat vegetable any way you want, raw, sautéed, stewed, grilled, or roasted. As you know the darker the color is the key when you select more nutritious vegetables. Also please buy the seasonal vegetable. In January, broccoli (too pricey now because of the cold weather in CA), cauliflower, escarole, artichoke, chicory, Chinese cabbage, mizuna are in season.
