Rob’s Turkey Chili

I would like to post, my husband, Rob’s great turkey chili recipe. So yummy and hearty. He makes once a while when he sees organic turkey thighs on sale at Food Coop.  We use 100% organic ingredients.

Ingredients:

2 cups dried black beans

3 lbs raw turkey thighs and/or drumsticks

2 medium onions, chopped

8 cloves of garlic, chopped

1 tsp salt

1/2 tsp pepper

1 bay leaf

1 stick cinnamon

2 tbs. chili powder

1 tbs. cumin

1 tsp oregano

1 can whole peeled tomatoes, or crushed (we use Bionature pureed tomato in glass bottle)

5 plum tomatoes, quartered

2 cups water

1/2 jalepeno pepper

1 red pepper, diced

1 green pepper, diced

Instruction:

Wash and soak beans 12-24 hours.  Put in pot and fill with water 1 inch above beans.  Cook until tender (about 45 minutes) with pinch of salt and 3 cloves of garlic.  Drain, set aside.

Sear turkey parts in heavy duty pot (cast iron or le crusette type) with olive oil, about 4 minutes each side. Set aside.  Sauté onions and remaining garlic in pot with oil and turkey juices, about 5 minutes, stirring occasionally.  Add 1/2 tsp salt, pepper, bay leaf, cinnamon, chili powder, cumin and oregano.  Saute a few more minutes.  Add Turkdy parts, can tomatoes, plum tomatoes, water, and 1/2 tsp salt.  Bring to boil.  Simmer on very low heat, uncovered 2-3 hours until turkey is tender.  Add beans, jalepeno, green and red pepper, cook 45 minutes longer.  Turkey should be falling off bone.  Remove bone and skin and any other non meat portions of turkey.  Break apart turkey with wooden spoon.  Serve with rice.  Garnish with cilantro and/or chopped avocado.
